Strawberry Sorbet Recipe


Just the thing to satisfy your dessert/sweet craving, and less than 100 calories!

Strawberry Sorbet Recipe

Ingredients:

1 cup frozen strawberries (or any frozen fruit of your liking)
1/2 cup water
3 Splenda packets

1.  Dump all ingredients into a blender and blend.  I start off adding only half of the water and slowly add more as needed.  

2. Place back into freezer for about 30 minutes.  
3.  Scoop out and serve.  (The picture is only half of the serving)

Kale Chips Recipe


Here's a quick and easy snack idea - kale chips.  The recipe was given to me by a friend (and reader!).  Kale is full of antioxidants and high in vitamins A, K, and C.  This recipe is so simple and it makes a great snack that's easy to throw in your bag and take to school or work.  It's hard to stop eating these, so it's a good thing that you can eat the entire batch for only 195 calories (or just half for 98 calories)!

Kale Chips Recipe

Ingredients:

1 bag prewashed and cut kale
Olive oil mist (I use my Misto, you can use any oil spray)
Salt


Directions:

1.  Mist a baking sheet with the olive oil spray.
2.  Spread the kale out on the baking sheet.
3.  Mist the top of the kale with the olive oil spray and sprinkle with salt.


4.  Put in the oven at 365 for 16 minutes, flipping halfway through


5.  Enjoy!

Grilled Sweet Potato Salad Recipe


Here's another quick, easy, and simple dish that can be eaten as a meal itself, a snack, or as a side with a protein.  

Grilled Sweet Potato Salad Recipe

Ingredients:

4 medium sweet potatoes
3/4 cup fresh basil leaves, julienned
3 ounces light feta, crumbled
2 tablespoons olive oil
Black pepper, to taste



Directions:

1.  Peel sweet potatoes and slice into 3/4 inch rounds



2.  Heat grill pan on medium-high heat
3.  Toss sweet potato slices with olive oil and black pepper



4.  Place sweet potato slices on grill pan (or you could roast them in the oven)



5.  After 3-4 minutes, rotate the slices a quarter turn (to get nice grill marks)
6.  After 7-8 minutes, flip the sweet potato slices over



7.  Cook for another 7-8 minutes and remove from grill pan
8.  Slice the rounds into bite size pieces and place back into the bowl you originally tossed the uncooked sweet potatoes in.  This way you can use the olive oil and pepper that was left in the bowl.



9.  Add in the julienned basil and crumbled feta and toss.
